I always feel a little weird re-posting other people’s recipes (and I’m not one to invent my own), but I like sharing the tasty ones I’ve found. So here are a few things I’ve cooked lately with links to the recipes!
Quesadillas. I found this amazing recipe for Spiced Black Bean, Grilled Avocado, and Goat Cheese Tacos which I didn’t get a picture of, but trust me they were fancy tasting like they were from a restaurant! I had leftover honey lime sauce so when we made quesadilla a few nights later I just made something similar to the tacos (minus the spices and plus tomatoes). It was good, but you have to try the tacos!
Grilled salmon, Orzo Salad with Goat Cheese, and grilled zucchini. Salmon was on special at the store, so I found this really simple recipe for grilling it. Nate ended up doing it on a grill skillet rather than in foil because the time in the recipe seemed way too long. I’m not sure how long it actually took, but Nate just took it off the grill when the fish started to flake. A friend shared some orzo salad from the grocery store counter with me the other day. It was so good I was determined to make something similar. And I found this Chicken-Orzo Salad with Goat Cheese recipe. I used spinach instead of arugula and left out the chicken, but it was so delicious and fresh tasting. Orzo is my new favorite pasta I think! Lastly the zucchini. I just cut it up fresh out of the garden, marinated it for a bit in some Italian marinade, and stuck it on skewers. Just don’t grill it too long or it gets soggy. I prefer mine a bit on the crunchy side!
I like to keep track of the recipes I’ve made and liked on a Pinterest board. I feel like I can’t always trust what people out there pin. I’m sure not many people pay attention, but if they do I want them to know that the food on that board is edible in my book. What about you, how do you keep track of good recipes?
